Choc Chai Raspberry and Almond Meal Muffins




I have spent many hours making wheat free muffins that are also sugar and dairy free. Most of the time they end up a bit dry after a day or too. The key is using almond meal! These muffins turned out a treat!!

50g coconut oil melted                             

1/2 cup raspberries

11/2 cups almond meal                               

1/2 cup gluten free self raising flour

1 teaspoon loose chai spice                       

1/4 cup boiling water

1 tablespoon rice malt syrup                       

3 eggs, lightly beaten

50g dark chocolate (85 % cocoa)                

1 1/2 teaspoons baking powder

1 teaspoon pure vanilla extract                   

Butter, to serve if you wish

Preheat the oven to 180 C and grease an 6 hole muffin tray. Add chia spice to boiling water and stoop for 5 min.

Place almond meal, self raising flour and backing powder in a bowl and stir until combined.

In a separate bowl, whisk coconut oil, vanilla, rice malt syrup and eggs. pour wet and dry ingredients together, strain chai and add to ingredients. Gently add raspberries and mix until smooth. Spoon the mixture evenly into the muffin holes.

Bake for 20 minutes, or until golden brown. Remove and serve with a dollop of butter if you wish.
